Three Chefs, One Truck, Six Years Strong

In 2020, three friends with a combined 20+ years in Japanese cuisine launched Jersey City first sushi food truck. The idea was simple but bold: serve restaurant-quality sushi from a window.

From Nearly Closing to National Recognition

The early days were brutal — truck breakdowns, parking battles, then COVID hit just months after opening. They almost closed for good.

Then Yelp called. Now Wisp Express is the only NJ food truck in Americas Top 100, with a cult following that orders weekly. As one superfan put it: All other sushi now pales in comparison.
